Chicken breasts or thighs
Broccoli florets
Oil
Salt
Black pepper
Garlic
Soy sauce
Chicken broth or water
Cornstarch
Optional: onion, ginger, red pepper flakes
Cut the chicken into bite-sized pieces
Season the chicken with salt and black pepper
Cut the broccoli into florets
Mince the garlic
Heat oil in a large skillet or wok over medium-high heat
Add the chicken and cook until browned and cooked through
Remove the chicken from the pan
Add a little more oil if needed
Add the garlic and optional onion or ginger
Cook for a short time until fragrant
Add the broccoli and a splash of chicken broth or water
Cover and cook until the broccoli is tender-crisp
Mix soy sauce, chicken broth or water, and cornstarch in a small bowl
Return the chicken to the pan
Pour in the sauce mixture
Stir and cook until the sauce thickens and coats the chicken and broccoli
Taste and adjust with more salt or pepper if needed
Serve hot with rice or noodles
