Cut chicken into bite-sized pieces and season with salt and pepper
Coat chicken lightly with cornstarch
Heat oil in a skillet over medium-high heat
Cook chicken until golden and cooked through, then remove from the pan
In the same pan, add minced garlic and ginger
Add orange juice, soy sauce, sugar, rice vinegar, and orange zest
Stir and bring the sauce to a simmer
Mix cornstarch with water and add to the sauce to thicken
Return the chicken to the pan and toss to coat
Cook for 1 to 2 minutes until the chicken is well glazed
Serve hot with rice or vegetables
