Heat oil in a skillet over medium heat
Cook ground beef, shredded chicken, or beans with onions, garlic, and seasonings
Stir in rice, cheese, and any desired fillings
Warm flour tortillas until pliable
Spoon filling into the center of each tortilla
Fold in the sides and roll tightly into a burrito shape
Secure with toothpicks if needed
Heat oil in a deep skillet or pot to 350°F
Fry chimichangas seam-side down until golden brown
Turn and fry the other side until crisp
Remove and drain on paper towels
Serve with salsa, guacamole, sour cream, or shredded lettuce
