2 cups corn kernels, fresh, frozen, or canned and drained
1/4 cup red onion, finely diced
1/4 cup fresh cilantro, chopped
1 jalapeño, seeded and minced
2 tablespoons lime juice
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: 1/2 cup diced poblano or bell pepper
Optional: 1 teaspoon adobo sauce for smoky heat
Mix corn, red onion, cilantro, and jalapeño in a bowl
Add lime juice, lemon juice, salt, and black pepper
Stir until evenly combined
Taste and adjust seasoning
Chill for 15 to 30 minutes before serving
