Separate 3 large eggs, placing whites and yolks in different bowls
Add 1/4 teaspoon cream of tartar to the egg whites
Beat the egg whites until stiff peaks form
In the yolk bowl, mix 3 tablespoons sugar, 1 tablespoon cornstarch, and 1/2 teaspoon vanilla extract
Fold the yolk mixture gently into the whipped egg whites
Preheat the oven to 300°F
Line a baking sheet with parchment paper
Spoon the mixture onto the parchment in a mound or several rounds
Bake for 25 to 30 minutes until lightly golden
Let cool before serving
