Wash and chop fresh spinach
Boil or steam the spinach until wilted
Drain well and squeeze out excess water
Melt butter in a pan
Add minced garlic and cook briefly
Stir in flour and cook for 1 minute
Slowly add milk or cream while stirring
Cook until the sauce thickens
Add salt, black pepper, and a pinch of nutmeg
Stir in grated Parmesan cheese if desired
Add the spinach to the sauce
Mix until evenly coated
Cook for 1 to 2 minutes
Serve warm
