Preheat the oven to 375°F (190°C)
Cut sourdough bread into 1/2-inch cubes
Place the bread cubes in a large bowl
Drizzle with olive oil or melted butter
Add salt and any desired seasonings
Toss until the cubes are evenly coated
Spread the cubes in a single layer on a baking sheet
Bake for 10 to 15 minutes
Stir halfway through baking
Remove when golden brown and crisp
Let cool completely before using or storing
