Preheat the oven to 350°F (175°C)
Line a muffin tin with cupcake liners
In a bowl, whisk together 1 1/2 cups all-purpose flour, 1 cup sugar, 1 1/2 teaspoons baking powder, and 1/4 teaspoon salt
In another bowl, whisk together 2 large eggs, 1/2 cup milk, 1/2 cup vegetable oil, and 1 teaspoon vanilla extract
Add the wet ingredients to the dry ingredients
Mix until just combined
Divide the batter evenly among the cupcake liners
Bake for 18 to 22 minutes
Check doneness with a toothpick
Remove from the oven
Let the cupcakes cool in the pan for 5 minutes
Transfer the cupcakes to a wire rack to cool completely
Frost as desired
