Chill the dough

Enclose the butter block in the dough
Roll out the dough
Fold the dough into thirds
Chill the dough
Repeat rolling and folding several times
Roll the laminated dough to the desired thickness
Cut into shapes
Add filling if desired
Shape the pastries
Place on a baking sheet
Proof until puffy
Brush with egg wash
Bake until golden brown
Cool slightly
Glaze or dust with sugar if desired
