Mix flour, salt, and water in a bowl
Add a little oil if desired
Knead the dough until smooth
Cover the dough and let it rest for 15 to 30 minutes
Divide the dough into small portions
Roll each portion into a thin circle or oval
Heat a skillet, pan, or griddle over medium-high heat
Place the flatbread on the hot surface
Cook until bubbles form and the bottom has brown spots
Flip and cook the other side until done
Remove from heat and repeat with the remaining dough
Serve warm
