How to Make Fresh Pasta Dough?

2 cups all-purpose flour or 00 flour

3 large eggs

1/2 teaspoon salt

1 tablespoon olive oil, optional

Place the flour on a clean surface or in a bowl

Make a well in the center

Add the eggs, salt, and olive oil to the well

Beat the eggs gently with a fork

Gradually incorporate the flour into the eggs

Mix until a shaggy dough forms

Knead the dough for 8 to 10 minutes until smooth and elastic

Add a little flour if the dough is too sticky

Add a few drops of water if the dough is too dry

Wrap the dough in plastic wrap or cover it

Rest the dough for 30 minutes at room temperature

Roll out the dough with a rolling pin or pasta machine

Cut into desired pasta shapes

Cook in salted boiling water until tender, usually 2 to 4 minutes
