Boil 2 pounds of potatoes until tender

Drain and peel the potatoes

Mash or rice the potatoes while still warm

Spread the potatoes out to cool slightly

Add 1 egg, 1 to 1 1/2 cups all-purpose flour, and salt

Mix gently until a soft dough forms

Turn the dough onto a floured surface

Knead lightly until smooth

Divide the dough into sections

Roll each section into a long rope

Cut the rope into small pieces

Shape each piece with a fork if desired

Bring a pot of salted water to a boil

Drop the gnocchi into the boiling water

Cook until they float to the surface

Remove with a slotted spoon

Toss with sauce and serve
