2 lb ground lamb or a mix of lamb and beef
1 small onion, grated and squeezed dry
4 cloves garlic, minced
2 tsp dried oregano
1 tsp dried thyme
1 tsp ground cumin
1 tsp ground coriander
1 tsp paprika
1 tsp salt
1/2 tsp black pepper
1/2 tsp ground rosemary
1 egg
1/2 cup breadcrumbs
Combine all ingredients in a bowl
Mix until very well combined and sticky
Cover and refrigerate for 1 to 2 hours
Shape into a loaf or press into a compact meat mixture
Bake at 350°F until cooked through
Or cook in a loaf pan and drain excess fat
Slice thinly for gyros
Serve in pita with tzatziki, tomato, and onion
