Roast 2 to 3 cups of peanuts if they are not already roasted
Let the peanuts cool slightly
Add the peanuts to a food processor
Process until the peanuts break down into a crumbly paste
Scrape down the sides of the bowl as needed
Continue processing until the mixture becomes smooth and creamy
Add a pinch of salt if desired
Add 1 to 2 teaspoons of oil if a smoother texture is wanted
Add honey or sugar if a sweeter peanut butter is desired
Blend again until fully combined
Transfer the peanut butter to a clean jar
Store in the refrigerator or at room temperature if using soon
