Chill a mixing bowl and whisk or beaters in the refrigerator for 10 to 15 minutes
Pour 1 cup cold heavy cream into the chilled bowl
Add 1 to 2 tablespoons powdered sugar, if desired
Add 1/2 teaspoon vanilla extract, if desired
Whisk or beat on medium-high speed until soft peaks form
Continue whisking or beating until stiff peaks form, if desired
Use immediately or refrigerate until ready to serve
Rewhisk briefly before using if it softens
