1 cup cornmeal
1 cup all-purpose flour
1 tablespoon sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 cup finely chopped onion
1 large egg
3/4 cup buttermilk
2 tablespoons melted butter
Vegetable oil for frying
Mix cornmeal, flour, sugar, baking powder, baking soda, salt, and black pepper in a bowl
Stir in chopped onion
Whisk egg, buttermilk, and melted butter in another bowl
Add wet ingredients to dry ingredients and mix until just combined
Heat oil in a deep skillet or pot to 350°F
Drop batter by tablespoonfuls into the hot oil
Fry until golden brown, about 2 to 4 minutes per side
Remove and drain on paper towels
Serve warm
