Choose the meat, poultry, or vegetable drippings
Remove excess fat from the pan
Place the pan over medium heat
Add shallots, onions, or aromatics if desired
Deglaze with stock, water, wine, or juice
Scrape up browned bits from the bottom of the pan
Simmer until the liquid reduces slightly
Strain the liquid through a fine sieve
Season with salt and pepper
Serve warm
