How to Make Kombucha Scoby?

Brew 1 quart of black tea

Dissolve 2 to 3 tablespoons of sugar in the hot tea

Let the sweet tea cool to room temperature

Add 1/2 cup of unflavored, raw, unpasteurized kombucha with live culture

Pour the mixture into a clean glass jar

Cover the jar with a breathable cloth or coffee filter

Secure the cover with a rubber band

Keep the jar in a warm, dark place

Leave it undisturbed for 1 to 4 weeks

Wait for a new SCOBY to form on the surface

Remove the SCOBY with clean hands

Store it in a little starter kombucha liquid until use
