Drain pasta and set aside
Melt butter in a saucepan
Whisk in flour and cook for 1 minute
Slowly add milk while whisking
Cook until sauce thickens
Stir in shredded cheddar cheese
Add salt, pepper, and optional seasonings
Mix cheese sauce with cooked macaroni
Transfer mixture to a greased baking dish
Top with extra cheese or breadcrumbs
Bake for 20 to 25 minutes
Broil briefly if you want a browned top
Let rest a few minutes before serving
