Ingredients:
1 block soft or silken tofu, cut into cubes
200 g ground pork or beef
2 tbsp oil
2 tbsp doubanjiang
1 tbsp fermented black beans, chopped
2 cloves garlic, minced
1 tsp ginger, minced
1 cup chicken or vegetable stock
1 tbsp soy sauce
1 tsp sugar
1 tsp cornstarch mixed with 2 tbsp water
1 to 2 tsp Sichuan peppercorn powder
2 scallions, chopped
Heat oil in a pan over medium heat
Add garlic, ginger, and fermented black beans
Add ground pork or beef and cook until browned
Stir in doubanjiang and cook briefly
Add stock, soy sauce, and sugar
Gently add tofu cubes
Simmer for a few minutes
Add cornstarch slurry and stir gently until thickened
Sprinkle Sichuan peppercorn powder
Top with scallions and serve hot
