Choose dried corn kernels or masa harina
If using dried corn, soak it in water with calcium hydroxide
Cook until the skins loosen
Rinse and rub off the hulls
Grind the corn into a fine dough
Add small amounts of water as needed
Knead until smooth and pliable
If using masa harina, mix with warm water
Stir until a soft dough forms
Knead briefly until evenly hydrated
Cover and let rest before use
