Beat 4 large eggs in a bowl
Add 1/4 cup melted schmaltz or vegetable oil
Add 1/4 cup water or seltzer
Stir in 1 cup matzo meal
Add 1 teaspoon salt
Add 1/4 teaspoon black pepper
Mix until combined
Cover and chill the mixture for 30 minutes
Bring a large pot of salted water or broth to a gentle simmer
Wet your hands and shape the mixture into balls
Drop the matzo balls into the simmering liquid
Cover the pot and cook for 30 to 40 minutes
Remove the matzo balls with a slotted spoon
Serve in soup or broth
