1 egg yolk
1 teaspoon mustard
1 tablespoon lemon juice or vinegar
1 cup neutral oil
Salt to taste
Add egg yolk, mustard, and lemon juice or vinegar to a bowl
Whisk until combined
Slowly drizzle in the oil while whisking constantly
Keep whisking until thick and creamy
Add salt to taste
Store in the refrigerator in a sealed container
