Soak rice noodles in warm water until softened, then drain
Heat oil in a pan or wok
Sauté garlic and onion until fragrant
Add sliced chicken, pork, shrimp, or tofu and cook until done
Add carrots, cabbage, green beans, and other vegetables
Pour in soy sauce, fish sauce, and a little broth or water
Add the noodles and toss gently to combine
Cook until the noodles absorb the sauce and are heated through
Add more broth or water as needed to keep noodles from drying out
Season with salt and pepper to taste
Transfer to a serving dish
Top with sliced green onions and lemon or calamansi wedges
