How to Make Pasta Sauce from Fresh Tomatoes?

Wash and core fresh tomatoes

Score an X on the bottom of each tomato

Blanch tomatoes in boiling water for 30 to 60 seconds

Transfer tomatoes to ice water

Peel off the skins

Remove seeds if desired

Chop the tomatoes

Heat olive oil in a pan

Sauté chopped onion until soft

Add minced garlic and cook briefly

Add chopped tomatoes to the pan

Season with salt and black pepper

Add basil, oregano, or other herbs

Simmer until thickened

Stir occasionally while simmering

Add a little sugar if the sauce is too acidic

Blend for a smoother sauce if desired

Taste and adjust seasoning

Use immediately or cool and store
