1 cup peanut butter
1/2 cup unsalted butter, softened
2 cups powdered sugar
1 1/2 cups graham cracker crumbs
1 teaspoon vanilla extract
2 cups chocolate chips
1 tablespoon coconut oil or shortening
Mix peanut butter, softened butter, powdered sugar, graham cracker crumbs, and vanilla extract until combined
Roll mixture into small balls
Place balls on a parchment-lined baking sheet
Chill balls in the refrigerator for 20 to 30 minutes
Melt chocolate chips with coconut oil or shortening
Dip each chilled ball into melted chocolate
Return coated balls to the baking sheet
Chill until chocolate is set
