How To Make Rice Cakes?

Rinse 2 cups of rice until the water runs clear

Soak the rice in water for 4 to 6 hours or overnight

Drain the rice well

Grind the rice into a smooth batter with a little water

Add salt if desired

Heat a nonstick pan or steamer

Pour or spoon the batter into small round portions

Cook until set and lightly golden, or steam until firm

Flip if pan-cooking and cook the other side

Remove and let cool slightly

Serve plain or with toppings if desired
