Hard-boil 4–6 eggs, then cool and peel them

Season 1 pound ground sausage with salt and pepper if needed

Divide the sausage into equal portions

Flatten each portion and wrap it around a peeled egg, sealing completely

Set up three bowls: flour, beaten eggs, and breadcrumbs

Roll each sausage-covered egg in flour

Dip in beaten eggs

Coat with breadcrumbs

Heat oil in a deep pan to 350°F

Fry the eggs in batches until golden brown and cooked through, about 6–8 minutes

Remove and drain on paper towels

Let cool slightly before serving
