How To Make Squash Casserole?

Preheat the oven to 350°F

Slice 4 to 5 cups of yellow squash

Boil or steam the squash until tender

Drain the squash well

Mash or lightly mash the squash

Melt 2 tablespoons of butter in a skillet

Sauté 1 small chopped onion until soft

Mix the squash, onion, 1 beaten egg, 1 cup shredded cheese, salt, and pepper

Stir in 1 cup crushed crackers or breadcrumbs

Transfer the mixture to a greased baking dish

Top with extra crushed crackers and a few dots of butter

Bake for 25 to 30 minutes until golden and set

Let it rest a few minutes before serving
