Cut beef into bite-sized cubes and season with salt and pepper
Heat oil in a large pot over medium-high heat
Brown the beef on all sides, then remove it from the pot
Add chopped onions, carrots, and celery to the pot
Cook until the vegetables soften
Add minced garlic and cook briefly
Stir in tomato paste if desired
Return the beef to the pot
Add beef broth or stock to cover the ingredients
Add potatoes, bay leaves, thyme, and other desired seasonings
Bring to a boil, then reduce to a low simmer
Cover and cook until the beef is tender
Stir occasionally and add more broth if needed
Adjust seasoning with salt and pepper
Remove bay leaves before serving
Serve hot with bread, rice, or mashed potatoes
