2 cups fresh strawberries, hulled and chopped
1/2 cup granulated sugar
2 tablespoons cornstarch
1/4 cup water
1 tablespoon lemon juice
1 tablespoon butter, optional
Combine strawberries, sugar, cornstarch, water, and lemon juice in a saucepan
Cook over medium heat, stirring constantly, until thickened and glossy
Mash some of the strawberries while cooking if a smoother glaze is desired
Remove from heat
Stir in butter, if using
Let cool before using over cake, pie, cheesecake, or pastries
