Use extra-firm tofu
Drain the tofu
Press the tofu for 15 to 30 minutes
Cut the tofu into even pieces
Pat the tofu dry
Toss the tofu with cornstarch
Add a little salt and seasoning if desired
Heat oil in a skillet or oven-safe pan
Cook the tofu in a single layer
Do not overcrowd the pan
Pan-fry until golden on all sides
Or bake at a high temperature until crisp
Flip the tofu halfway through cooking
Serve immediately for best crispiness
