How To Make Vada Pav?

Boil 4 medium potatoes, peel, and mash them

Heat 1 tablespoon oil in a pan

Add 1 teaspoon mustard seeds

Add 8 to 10 curry leaves

Add 2 to 3 chopped green chilies

Add 1 teaspoon grated ginger

Add 1/4 teaspoon turmeric powder

Add salt to taste

Add 2 tablespoons chopped coriander leaves

Mix in the mashed potatoes

Let the filling cool

Shape the potato mixture into small balls

Mix 1 cup gram flour

Add 1/4 teaspoon turmeric powder

Add 1/2 teaspoon red chili powder

Add a pinch of baking soda

Add salt to taste

Add water gradually to make a smooth batter

Heat oil for deep frying

Dip each potato ball in the batter

Fry until golden and crisp

Drain on paper towels

Slice 4 pav buns

Spread green chutney on one side

Spread dry garlic chutney on the other side

Place one fried vada inside each pav

Serve hot with fried green chilies and chutney
