How To Make Water Kefir?

Dissolve 1/4 cup sugar in 4 cups non-chlorinated water

Add 1/4 cup water kefir grains

Add 1–2 dried figs or 1 tablespoon raisins

Add 1 slice lemon

Cover loosely with a cloth or lid

Let ferment at room temperature for 24–48 hours

Strain out the kefir grains

Bottle the liquid

Optional: add fruit juice or fruit for second fermentation

Let bottle ferment 12–48 hours

Refrigerate before drinking

Reuse the grains for the next batch
