Peel fresh ginger
Slice it very thinly
Pack the ginger into a clean jar
Add salt and let it sit briefly
Rinse and drain the ginger
Combine vinegar, water, and sugar in a pot
Heat until the sugar dissolves
Pour the hot brine over the ginger
Let it cool to room temperature
Seal the jar and refrigerate
Wait at least 24 hours before using
Store refrigerated and use within a few weeks
