Buy fresh oysters from a reputable source
Keep oysters refrigerated until ready to use
Discard any oysters with cracked shells or that are already open and do not close when tapped
Scrub the shells under cold running water
Use a stiff brush to remove dirt and debris
Rinse the oysters well
Shuck the oysters with an oyster knife if serving raw or using the meat
Insert the knife at the hinge and twist to open the shell
Cut the muscle to detach the oyster from the shell
Strain and save the liquor if desired
Remove any shell fragments
Keep shucked oysters chilled until serving or cooking
For cooking, arrange oysters on a baking sheet, grill, or pan as needed
Cook until the shells open or the oyster meat turns opaque and firm
Discard any oysters that do not open after cooking
Serve immediately with desired accompaniments
