How To Reverse Sear?

Pat the meat dry

Season generously with salt and pepper

Preheat oven to 200–275°F

Place meat on a wire rack over a baking sheet

Cook in the oven until internal temperature is 10–15°F below target

Remove from oven and let rest briefly

Heat a skillet, grill, or cast-iron pan until very hot

Add a small amount of high-smoke-point oil

Sear the meat 45–90 seconds per side

Sear the edges if needed

Remove and rest for a few minutes

Slice and serve
