Open the Settings app
Tap Control Center
Tap Screen Recording
Tap the green plus icon to add Screen Recording (if needed)
Open Control Center
Press and hold the Screen Recording button
Tap Microphone to enable or disable audio
Tap Start Recording
Record your screen
To stop, tap the red status bar or open Control Center and tap the Screen Recording button again
Find the recording in the Photos app under Screen Recordings
