Remove the membrane from the back of the ribs
Pat the ribs dry with paper towels
Lightly coat the ribs with mustard or oil
Mix salt, black pepper, paprika, garlic powder, onion powder, and brown sugar
Add chili powder, cayenne, or smoked paprika for heat and depth
Rub the seasoning evenly over all sides of the ribs
Press the rub into the meat to help it stick
Let the ribs rest for 30 minutes to 12 hours before cooking
Refrigerate if resting longer than 30 minutes
Apply barbecue sauce near the end of cooking if desired
