Pat the meat dry with paper towels
Season the meat with salt and pepper
Preheat a heavy skillet or pan over medium-high to high heat
Add a small amount of high-smoke-point oil
Wait until the oil shimmers
Place the meat in the pan without overcrowding
Leave it undisturbed until a brown crust forms
Flip the meat and sear the other side
Sear the edges if needed
Reduce heat or finish in the oven if the meat is thick
Remove the meat and let it rest before slicing
