1 cup rolled oats
1 cup milk
1 egg
1 ripe banana, mashed
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 teaspoon vanilla extract
1 tablespoon oil or melted butter
Blend oats until fine or leave slightly textured
Add milk and let oats soak for 5 minutes
Add egg, mashed banana, baking powder, cinnamon, salt, vanilla, and oil
Mix until combined
Heat a lightly greased skillet over medium heat
Pour batter onto skillet in small rounds
Cook until bubbles form and edges look set
Flip and cook until golden brown
Serve warm with desired toppings
