Preheat the oven to 325°F to 350°F
Pat the lamb ribs dry
Season with salt, pepper, garlic, rosemary, thyme, and olive oil
Optional: marinate for 1 to 12 hours in the refrigerator
Place the ribs on a baking tray or in a roasting pan
Cover tightly with foil
Bake for 1.5 to 2.5 hours until tender
Remove the foil
Increase the oven to 425°F or use the broiler
Brush with barbecue sauce or glaze if desired
Cook uncovered for 10 to 15 minutes until browned
Rest the ribs for 10 minutes
Slice and serve
