How to Make Gazpacho?

6 ripe tomatoes

1 cucumber

1 green bell pepper

1 small red onion

1 garlic clove

2 cups tomato juice

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon salt

1/2 teaspoon black pepper

1 slice bread, optional

Chop the tomatoes, cucumber, bell pepper, and onion

Mince the garlic

Combine all ingredients in a blender or food processor

Blend until smooth or slightly chunky

Taste and adjust seasoning

Chill for at least 1 hour

Serve cold
