Place a bamboo sushi mat on a clean, flat surface
Cover the mat with plastic wrap if desired
Put a sheet of nori on the mat, shiny side down
Wet your hands lightly with water
Spread a thin, even layer of sushi rice over the nori
Leave a small strip of nori uncovered at the top edge
Add fillings in a line across the center of the rice
Lift the edge of the mat closest to you
Roll the mat forward over the fillings
Tuck the fillings in tightly as you roll
Press gently but firmly to shape the roll
Continue rolling until the nori edge seals the roll
Squeeze the mat around the roll to make it compact
Unroll the mat and remove the sushi roll
Slice the roll with a sharp, wet knife
Clean the knife between cuts if needed
