Remove the membrane from the back of the ribs
Trim any excess fat or loose pieces
Pat the ribs dry with paper towels
Apply a dry rub evenly on both sides
Let the ribs rest for 30 minutes to 12 hours in the refrigerator
Preheat the oven to 275°F
Place the ribs on a foil-lined baking sheet, meat side up
Cover tightly with foil
Bake for 2.5 to 3 hours until tender
Remove from the oven and carefully uncover
Brush with barbecue sauce if desired
Increase oven temperature to 400°F or preheat a grill
Cook uncovered for 10 to 15 minutes to set the sauce
Rest the ribs for 10 minutes before slicing
Cut between the bones and serve
