2 cups fresh strawberries, hulled and sliced
1/2 cup granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
2 tablespoons water
1 teaspoon vanilla extract
Combine strawberries, sugar, and lemon juice in a saucepan
Mix cornstarch and water in a small bowl until smooth
Add cornstarch mixture to the saucepan
Cook over medium heat, stirring constantly, until thickened
Remove from heat and stir in vanilla extract
Cool completely before spooning over cheesecake
Refrigerate until ready to use
