How to Make Potato Bread?

Boil 2 medium potatoes until tender

Drain and mash the potatoes until smooth

Let the mashed potatoes cool slightly

Warm 1 cup milk

Dissolve 2 1/4 teaspoons active dry yeast in the warm milk

Add 2 tablespoons sugar and let sit until foamy

Mix the mashed potatoes, yeast mixture, 2 tablespoons melted butter, 1 teaspoon salt, and 1 beaten egg

Add 3 to 4 cups all-purpose flour gradually

Stir until a soft dough forms

Knead the dough on a floured surface until smooth and elastic

Place the dough in a greased bowl

Cover and let rise until doubled in size

Punch down the dough

Shape into a loaf and place in a greased loaf pan

Cover and let rise again until puffy

Bake at 375°F for 30 to 40 minutes

Remove from the pan and cool on a wire rack
