2 lbs purple yam (ube), boiled, peeled, and grated
1 can condensed milk
1 can evaporated milk
1 can coconut milk
1/2 cup sugar
1/4 cup butter
1/2 teaspoon salt
1 teaspoon vanilla extract
In a large pan, melt the butter over low heat
Add the grated ube and mix well
Add the coconut milk, evaporated milk, condensed milk, sugar, and salt
Stir continuously over low heat until thick and smooth
Add the vanilla extract and mix well
Continue stirring until the mixture pulls away from the pan
Transfer to a greased container
Let cool before serving
