Clean the oyster mushrooms with a dry brush or damp paper towel
Trim off the tough base if needed
Tear or slice the mushrooms into even pieces
Heat a skillet over medium-high heat
Add oil or butter
Add the mushrooms in a single layer
Cook without stirring for 2 to 3 minutes
Stir and continue cooking until browned and tender
Add salt and pepper
Add garlic, herbs, or other seasonings if desired
Cook for 1 to 2 more minutes
Serve hot
