Wash the potatoes thoroughly
Cut each potato in half lengthwise
Cut each half into wedges
Keep the wedges similar in size
Soak the wedges in cold water for 20 to 30 minutes
Drain and pat the wedges dry
Toss the wedges with oil and seasonings
Spread the wedges in a single layer on a baking tray
Bake at 425°F to 450°F until golden and crisp
Flip halfway through cooking
Serve hot
